Diabetic Sausage Pasta - Easy Diabetic Recipes

1 can reduced-fat condensed tomato soup, (10 3/4 oz)
1/4 cup fat-free (skim) milk
1/2 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves, minced
1 tsp dried Italian seasoning
1 cup sliced mushrooms
1/2 tsp salt, (optional)
1 package reduced-fat smoked turkey sausage - (7 oz), cut 1/8" slices
4 cups cooked bow tie pasta


Recipe Instructions:
  1. Combine soup and milk in small bowl; mix well and set aside.
  2. Spray large nonstick skillet with nonstick cooking spray; heat over medium-high heat until hot. Add onion, pepper, garlic and Italian seasoning; cook and stir until onion and peppers are tender.
  3. Add mushrooms and salt; cook and stir 2 to 3 minutes. Add sausage; mix well. Reduce heat; cover and simmer an additional 2 minutes. Add pasta; toss until coated with sauce.

This recipe yields 6 servings.
Exchanges Per Serving: 1 Starch, 1 Meat, 3 Vegetable.
Nutrition Facts: Calories 203; Calories from Fat 11%; Total Fat 3g; Saturated Fat 1g; Protein 10g; Carbohydrates 36g; Cholesterol 15mg; Sodium 486mg; Dietary Fiber 3g.

Diabetic Zucchini Casserole - Diabetic Casserole Recipes

Servings: 3 Measure Ingredient
2 medium Zucchini; sliced very thin ( I shredded mine)
1 Egg;
1 teaspoon Prepared mustard;
1/2 teaspoon Ground white pepper;
1/2 teaspoon Ground nutmeg;
1 Green onion; sliced thin
1/2 cup Lowfat Swiss cheese; grated ( I used mozzarella)

Recipe Instructions:

  1. Put the zucchini in a colander or on towels to drain off the moisture. Combine the remaining ingredients. Add the zucchini and mix well.
  2. Pour into a lightly oiled 2-quart casserole. Bake at 350 F for 40 to 45 minutes.
1/3 recipe - 72 calories, 1/2 med-fat meat exchange, 1 vegetable 3 grams carbohydrate, 5 grams protein, 5 grams fat 68 mg sodium, 128 mg potassium, 100 mg cholesterol

Large drinking cup
12 oz bottled water
Ice
4 oz Minute Maid Lemonaide Lite (2 carbs)
1 oz Sunkist Orange Soda (4 1/2 carbs)

You can use Squirt, Sprite, or Mountain Dew if you prefer.

Makes a low carb refreshing drink if you are wanting to cut back or avoid full blow sodas!

Diabetic Orzo Pasta

Recipe Ingredients:
8 oz Orzo or other sm pasta, such as mini shells
1 tbsp Virgin olive oil
3 tbsp Pine nuts, pignoli
1 tbsp Dried leaf basil
Salt to taste
Pepper to taste 

Recipe Instructions:
  1. Bring a large kettle of water to a boil and cook orzo until al dente; 3 minutes. 
  2. Drain in a colander. Meanwhile, in a small, non-stick killet, heat oil and stir in pine nuts. 
  3. Cook until golden, about 5minutes.
  4. Add basil. Toss with orzo, season with salt and pepper totaste. Heat through and serve.

Food Exchange per serving: 2 STARCH/BREAD EXCHANGES + 1 FAT EXCHANGE
CAL: 183; CHO: 2mg; CAR: 29g; PRO: 6g; SOD: 49mg; FAT: 5g;

Servings: 4 sticks of asparagus
Prep: 12 Minutes

1 1/2 pounds Asparagus;* cut diagonally into 1" pieces
2 tablespoon Fresh parsley; snipped
2 tablespoon Lemon juice;
1/4 teaspoon Salt;
2 slice Bacon; fried and chopped
  1. Place steamer basket in 1/2" water in saucepan or skillet (water should not touch the bottom of basket). Place lower stalk pieces in basket. Cover tightly and heat to boiling; reduce heat. Steam 4 minutes.
  2. Add tips. Cover tightly and steam until crisp-tender, 4 to 5 minutes longer.
  3. Toss asparagus with parsley, lemon juice and salt. Sprinkle with bacon.
Food Exchanges per serving: 1 VEGETABLE EXCHANGES + MAYBE 1/2 HIGH-FAT MEAT EXCHANGE; CAL: 75; (Bacon listed as Saturated Fat, but we wouldn't use it anyhow would we).

Herbal Supplements and Home Remedies For Diabetes

The word diabetes was coined by the 2nd-century A.D. Greek physician, Aretus the Cappadocian, meaning 'the siphon' as the condition is characterized by excessive urination.

According to the World Health Organization (WHO), diabetes is a chronic disease that occurs when the pancreas either does not produce enough insulin or when the body cannot effectively use the insulin it produces. 


Hyperglycaemia, or raised blood sugar, is a common effect of uncontrolled diabetes and over time leads to serious damage to many of the body's systems, especially the nerves and blood vessels. The word mellitus was added to diabetes in 1675 by Thomas Willis. Mel in Latin means honey and refers to the excess of glucose in the urine and blood of people with diabetes.


Types of diabetes

According to WHO, there are three main types of diabetes:

Diabetes Type 1 - The body does not produce insulin at all. Also called early onset or juvenile diabetes, it requires the person to inject insulin throughout his/her life. People suffering from this types of diabetes are also very prone to ketoacidosis. The cause is not certain and could be genetic, viral, or multifactorial.
